This seafood-inspired degustation in culinary destination Circl's private dining room was a nod to Executive Chef Elias Salomonsson's Swedish heritage.


The specially curated six course menu showcased Australia's seasonal produce and was paired with fine and rare wines by Sommelier Xavier Vigier from a cellar housing in excess of 1500 bottles sourced locally and internationally:


Sydney Rock Oyster, lemon thyme sorbet, rainbow trout rillette, dill, rye.
