"On the Grill' is a series of collaborations between Melbourne bar Lilac Wine and guest chefs to showcase diverse cuisines using their signature wood fired stove and smoker.
Shehan Setunga, also known as Juppé, doubles as a Sri Lankan-inspired culinarian and DJ.
The sensory experience of taste and sound began with an innovative four course menu of:
Toddy fermented flatbread
Buffalo cream cheese, seaweed, nai miris chutney, sunflower seeds
Black tea poached octopus bathala curry, lunu miris
Negombo black beef osso bucco, wood apple jus
Charred eggplant moju, mustard greens, cashew cream
Mung bean salad, pickled starfruit, devilled peanuts, achcharu dressing
Bibikkan, ceylon cinnamon butterscotch, crème fraîche
After the kitchen pass, Juppé took to the decks and delivered upbeat electronic tracks influenced by folk and jazz from the pearl of the orient.
