Bistro Guillaume played host to an intimate winemaker dinner alongside Dom Pérignon Vigneron Jean-Baptiste Terlay, visiting from France and integral to the creation of the maison’s revered luxury cuvées.
The evening unfolded as a guided sensory journey through the house’s current releases, library vintages and extraordinarily aged expressions.
Each Champagne was paired with a bespoke six-course menu by Chef and Restaurateur Guillaume Brahimi, meticulously designed to echo the wines’ structure, character and texture.
The progression moved seamlessly from pristine ocean delicacies of local lobster, crab and caviar to deeper warming notes of roasted Barossa Valley chicken and Tasmanian white asparagus before concluding with a duo of strawberries.
A defining moment was the pouring of Dom Pérignon Vintage 1993 Plénitude 3, a rarity of which only six bottles exist in Australia.
To borrow the words attributed to Dom Pérignon himself, it was quite simply, like tasting the stars.
